To say I love banana bread is an understatement. I think I have tried every recipe out there always trying to perfect the last one.
Until now.
This is where I draw the line in the flour. No need to go any further. This is THE one. Thank you Apartment 46 for the jumping off point!
Best Banana Bread ever

3 ripe bananas; 2 mashed, 1 diced
1 cup sugar
1 egg
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/4 cup softened butter
1/4 teaspoon cinnamon
1/2 c chopped pecans
Preheat oven to 325°.
Mash bananas in large bowl. Add the sugar and egg, mix together.
Stir in dry ingredients.
Add butter.
Mix in cinnamon and pecans.
Lightly butter an 8″ x 4″ bread pan, or two 5.75″ x 3″ pans.
Pour batter into pan. Place pan on the middle rack in the oven.
Bake for one hour and 15 minutes, give or take 10 minutes. If using the smaller pans, bake for about 37 minutes.
Eat like there is no tomorrow.

I have not. My daughter recently made muffins with the GF flour blend called Cup for Cup and said they were really good. It would be worth a try!

I had a banana bread recipe that had sour cream in it, but I have lost it. I loved that banana bread. I am going to try yours since you say it is the best ever. I will let you know how I like it.

Can I substitute zucchini for the bannas? I don’t like them or bannas, but I love zucchini bread. It’s the only way I eat zucchini.
